High density of planting (8 500 feet/ha). The soils are plowed and the vines are nourished by the previous year's cuttings, by organic compost and by powdered limestone (to neutralize the soil's acidity). Human intervention comes into play several times during each season for de-budding, trellising, leaf-thinning...

Vinification

We harvest all grapes by hand before carefully sorting them in the cellar.
Elaborated by direct pressing and bleeding.
Cooled and then decanted juice.
Alcoholic fermentation from 16 to 19 °C.
Fermentation stopping to reach 11%Vol.
Without malolactic fermentation to preserve freshness.
Ageing of 3 months in cement tanks with fining.
After a light filtration, bottling by ourselves.

Tasting

Vivid pink colour.
Citrus and tart red fruits aromas.
In mouth, balance in between vivacity and natural sweetness of the wine.
Citrus flavours at the end.

This rosé doux (sweet) is made by employing a partial fermentation that results in a satisfying roundness, balanced by citrus aromas.
