Contexte

2021 is the worst year of our life as winemaker. Following the frost, we saw catastrophic losses across the field.
We decided to look for grapes certified in organic farming thanks to friends winemakers. In addition to our usual cuvées, several cuvées of Vin de France 2021 certified AB will be available.

Organic farming.
Blend of Gamay, Syrah et Grenache on different soils.
Manual harvests put in plastic cases.
 

Vinification

Vinification at the Domaine Sérol of each variety grape independently.
Grapes pruned on vibrating sorting table in the cellar.
20% to 40% whole bunch.
15 to 18 days of slow fermentation/maceration with indigenous yeasts only in cement tank.
Aged 6 months in cement tank with racking, then blended.
Light filtration, bottled by the Domaine’s team.

Domaine Sérol and Michel Troisgros share ownership of two hectares of Les Blondins.

Very steep slopes of granite.
1.89 ha of over 20 year old wines.
Altitude between 420 and 460 meters.
South / South-eastern exposure.

Biodynamic.
High plantation density : 8,500 vines/ha.
Trellised vines. Single Guyot pruning.
Manual harvests.
 

Vinification

Grapes pruned on vibrating sorting table in the cellar.
30% whole bunch, 70% de-stemmed.
Bottom of the hill (30%) : 10 to 12 days of alcoholic fermentation and then aged for 6 months in cement tank.
Top of the hill (70%) : 15 days of slow maceration/fermentation and aged 6 to 9 months in wooden vats. Both parts are blended together in preparation for bottling.
Light filtration, bottled by the Domaine’s team.

The wine is then bottled and fermentation continues until the wine reaches 8 % alcohol and 5 bars of pressure. The bottles are then disgorged to remove the deposit.
